Asian-style noodles with Mushrooms

Warm nuts and fruit

Dinner:
Roasted Vegetables with halibut or salmon steaks
Couscous

Fresh orange wedges

Breakfast:
Mexicali Scramble (Skinny Bitch Ultimate) – a great tofu scramble with bell peppers, salsa and spices served on a tortilla spread with refried beans; side of avocado
Decaf Soy Latte

Lunch:
Buckwheat Pasta with Seitan

Snack:
Roasted mixed nuts

Dinner:
Coconut and Almond Encrusted Tofu with Spicy Mango Chutney (Skinny Bitch Ultimate)
Glazed Carrots

Dessert:
Fresh Orange Wedges

    That coconut and almond tofu sounds delicious! Do you think it could be made with cubed tofu? That’s all I have on hand at the moment, but I really want to make it.

      Brook, I don’t see why not as long as the cubes aren’t going to fall apart. Some of my “fingers” fell apart and ended up being cubes anyway.
